Ferrero Rochers are one of my favourite sweet treats so it was only was a matter of time until I decided to make a more wholesome version. This recipe is for 8 Ferrero Rocher Truffle Balls that are raw, indulgent and guilt free. Raw Chocolate Nectarine Tart

Nectarines have to be one of our favourite stone fruits, they can be used in salads, smoothies, desserts and meat dishes. We like to eat ours raw so that they are juicy and to emphasise the delicious flavour of the fruit. The “Hunny” nectarine, grown right here in New Zealand by Yummy has been used in this tart as it is a lot sweeter in flavour than your average nectarine, meaning we would not have to sweeten the tart with any liquid sweeteners.

Nectarine and Strawberry Sorbet

We are a little bit sorbet obsessed and with Summer on the way we have been busy in the kitchen coming up with new flavour combinations to satisfying our cravings for a cold sweet treat.

Sorbet is traditionally made with castor sugar, however we have swapped this out for Chelsea Coconut Sugar – an unrefined sugar option that has a beautiful toffee like taste.  The mixture of tart lemon, toffee sugar and the sweetness of strawberries and nectarines make for a taste explosion!

Chocolate Hazelnut Cheesecake

Lib and I created this recipe for our Auckland and Wellington food workshop and wanted to share it with you all, so when she came over to Sydney last week we made the cake again and photographed it.  Best part of our job! The flavour of this cheesecake reminds us of Nutella and that is thanks to the hazelnuts and cacao.  This vegan cheesecake is extremely filling and full of good fats from the coconut oil, walnuts and cashews so you only need a tiny slice at a time to feel nourished.

Apple and Carrot Cake

This is a recipe for a quick and easy apple and carrot cake that will melt in your mouth.  The cake is gluten free, grain free and refined sugar free. It uses cinnamon, coconut sugar and honey to naturally sweeten it, and the apple makes the cake moist and light.

Cinnamon Banana Pancakes

Initially I wanted to make these pancakes flour less so experimented with a few ingredient combinations which all tasted delicious, however, the pancake mixture did not stick well so I often ended up with a mess in the pan.  For my 4th try at getting these right I thought I would add in some coconut flour to see if that would help - perfection! What I love about coconut flour is that it is gluten free, grain free, high in fibre and healthy fats.

Peanut Butter and Cacao Brownie

Chocolate and peanut butter are two foods that taste incredible when combined.  These decadent, chewy peanut butter and cacao brownies are the perfect guilt free comfort food. The peanut butter makes the brownie creamy and rich and the cacao nibs gives it a crunchy texture. This is such a simple recipe to follow and can be easily adapted by adding nuts, shredded coconut, dried fruit and white chocolate bits. I served my brownies with plain yogurt and they also taste great eaten on their own, they are moist so do not worry if you do not have yoghurt.

Fruit Whip featuring Yonanas machine

After hearing lots of talk about a Yonana machine I decided to purchase one and have to say I'm pretty happy I did. For anyone who is unsure of what a Yonana is, it is a machine that makes it possible for vegans, any one who is dairy free or lactose intolerant and those of us who are more health conscious to enjoy frozen desserts similar to ice cream/sorbet/frozen yoghurt.  All you need is frozen fruit as a base, along with your favourite topping, mine is dark chocolate and pistachios.  Other fruits that process well through this machine are frozen berries, peaches, apricots, mangoes apples and cranberries.
