Chocolate Chip Protein Cookies


If you're a fan of almond butter, these soft, and chewy cookies were made for you. These are made using Vanilla + Coconut protein powder, almond butter, oats, shredded coconut, and dark chocolate chips. Protein powder is most commonly used for smoothies, but it can also be added to baking. These cookies are a great way to satisfy your sweet tooth with an added bonus of containing protein powder to keep you fuller for longer. 

* Some almond butters can be creamier than others. If your mixture looks a little too liquidy, you can add a little more protein powder; if it looks too dry and crumbly, you can add a little more almond butter.

1 cup oats
1/2 cup dark chocolate chips
1/2 cup almond butter (can use peanut butter) *
1/4 cup protein powder (I used Two Islands Co. Vanilla + Coconut)
1/4 cup shredded coconut
1/4 cup maple syrup
1/2 teaspoon baking powder
1/4 teaspoon salt


Preheat the oven to 180 degrees, fan bake and line an oven tray with baking paper. 
In a food processor or blender, blend the oats until fine. Add the protein powder, shredded coconut, baking powder, and salt. 
Using a double boiler or microwave, melt the almond butter and maple syrup. 
Add the dry ingredients to the bowl and stir until a dough forms. Mix in the chocolate chips.
Using a tablespoon, scoop out the cookie mixture to form balls and place them on the baking sheet. Gently press down the balls and bake in the oven for 10-15 minutes or until they have turned slightly golden. Allow to cool for 10 minutes before eating.
