Creamy coconut filling, covered in sweet chocolate, nothing beats this combo! These bounty balls are a homemade version of the classic 'bounty bar'. They are a simple, delicious dessert that are made using only 5 ingredients, require no baking, and are vegan and refined sugar free. Store these balls in the fridge and enjoy anytime you need a sweet treat.
1 1/2 cups shredded coconut
1 cup dark chocolate (I use 70% dark chocolate to make the recipe vegan)
3 tablespoons maple syrup
3 tablespoons coconut oil, melted
1/8 teaspoon salt
2 tablespoons shredded coconut (for sprinkling over)
Line a baking tray with baking paper.
In a food processor, blend the shredded coconut, maple syrup, coconut oil and salt. If you don't have a food processor, it can be mixed by hand.
Form the mixture into balls and place onto the non-stick paper. If the mixture is too dry, add more maple syrup. Place into the freezer for 20 minutes.
Using a double boiler, melt the dark chocolate and dip the balls into the dark chocolate. Place balls back onto the baking paper and sprinkle with remainder of the shredded coconut. Freeze for 1 hour before eating.
