Apple Bircher Muesli

If you're looking for ways to keep your energy levels balanced and cravings in check, this bircher muesli will be a big help. This recipe is wholesome, thick and satisfying. I usually have oats for breakfast but recently have been having bircher muesli to switch things up and get me excited about breakfast. Feel free to add other toppings such as berries, nut butter, shredded coconut and nuts and seeds. I look forward to eating this in the morning, it keeps me going until lunchtime and it is packed with nutrients!

There is valid reasoning for the old saying “an apple a day keeps the doctor away”. Apples help to improve digestion due to their high fibre content. They make a great pre or post workout snack thanks to their quick releasing natural sugars that can boost your energy. Apples are also rich in anti oxidants and vitamin C. ½ grated green apple
½ cup oats
½ cup milk of choice (I used almond)
¼ cup Greek yoghurt
2 tablespoons dried goji berries (can use cranberries)
2 tablespoons walnuts (roughly chopped)
1 tablespoon flax seeds
1 tablespoon pumpkin seeds
½ teaspoon cinnamon
Pinch of nutmeg
½ green apple, sliced into match sticks
2 tablespoons walnuts (roughly chopped)


Combine all ingredients (apart from the topping ingredients) in a bowl and leave overnight in the fridge to soak.
In the morning, mix the bircher muesli and top with sliced green apple, walnuts and extra cinnamon.
